    I confess: On a daily basis, I drink tea, not coffee. But there are times when I indulge in some coffee drinking. I adore frapps (which, it’s true, are more dessert than anything else). And during warm weather, I love iced coffee. Growing up, we always brewed ordinary coffee then added ice to it on hot days. Sometimes we stuck the hot coffee in the fridge first, to cool. But there is a better way. And now that the weather is beginning to warm a bit, you need to know it. To make a truly cold, un-water-diluted glass of iced coffee, begin by creating a cold brew. This will result in a richer, smoother drink. And actually, it makes a concentrate from which you can make iced coffee repeatedly. So it saves time, too. Find a 1 gallon container; a large pitcher works, but so does a large Rubbermaid-style food storage container. Pour 1 lb. of coffee grounds into the container. Add 8 quarts of cold water. Stir, making sure there are no dry coffee granules; all the coffee should be wet. Now cover the container and set it aside for 8 to 16 hours. After the coffee has cold brewed, grab another large container and a fine strainer. Add 2 or 3 layers of cheesecloth over the top of the strainer, because otherwise some grounds are likely to end up in the coffee. Hold the strainer over the empty container and pour the coffee through the strainer, slowly. Even once you’re done pouring, liquid will be emptying from the strainer. Give it time and let the strainer sit over the fresh container until the coffee grounds are done dripping, then using a spoon, press down on the grounds in the strainer to get the last bits of liquid from them. Cover the container holding the cold brewed coffee, or transfer it to a pitcher. (However, placing the coffee in an air tight container will make it last much longer.) Pop the container into the fridge. Once the coffee is completely chilled, you can make yourself a glass. To make a glass of iced coffee, fill the glass with ice. Add coffee. Add cream, milk, or half and half, if desired. You can also add sugar and coffee syrup. Stir well. If you’re really naughty, add some whipped cream on top. Then drink through a straw. Heavenly!
